Apple and Honey Stuffed Chicken for Imbolc

Ingredients: 

1 apple, peeled, cored, and diced
1 onion, chopped
1 tablespoon salt
1 teaspoon pepper
1 whole chicken
4 tablespoons butter
4 tablespoons honey

Method: 

Preheat oven to 160 degrees. Toss together apple, onion, salt, and pepper. Stuff into chicken. Melt together butter and honey. Baste meat with honey butter.

Roast about 1 1/2 hours at 160 degrees, basting halfway through. Cover with lid or aluminum foil for moist meat, uncovering the last 15 minutes to brown.

Gluten and Wheat Free Banana Honey Muffins

Ingredients

  • 3/4 cup rice flour
  • 1/2 cup potato flour
  • 1/4 cup cornflour
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder
  • 1 tsp xanthan gum
  • 3/4 tsp salt
  • 1/2 cup mashed banana
  • 1 beaten eggs
  • 3 tbsps canola oil
  • 2 tbsps honey
  • 1/4 cup melted butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar

    Directions:

    Preheat oven to 180c (350f) or 160c (320f) for fan forced. Lightly grease muffin pan (I use 1/3 cup muffin pan).

    Sift flours, bicarb, baking soda, xantham gum and salt together, set aside.

    In a separate large mixing bowl, mash banana (I use a fork to mash and mix throughout this recipe), add egg, canola oil, honey, butter and sugars, mix well.

    Add dry ingredients to wet ingredients, mix until well combined.

    Spoon into prepared muffin pan, bake for 20mins.

    Cool on cooling rack.

    Serve warm or cool, with or without butter.
